Vinification

The grapes are carefully selected for harvest at their peak phenolic ripeness, taking into account the unique characteristics of each grape variety in the blend. Each grape is vinified separately in stainless steel tanks that are carefully regulated to ensure optimal temperature conditions. The maceration process lasts a medium-long duration of approximately 15 – 16 days, allowing for the extraction of desired flavors and tannins. The fermentation occurs at a controlled temperature, gradually reaching a maximum peak of 28 °C as the process nears completion.

Refinement

After delicately extracting and gently pressing the fermented pomace, the wines undergo a meticulous process of separation. This serves two purposes: to facilitate the malolactic fermentation and to initiate the initial maturation on the prestigious lees. Following this, the wine goes through two additional racking procedures, where an artful composition takes place, allowing each component to showcase its achieved quality. A period of refinement ensues for the blended wine, as it luxuriates in stainless steel tanks, harmoniously entwined with the most exquisite remnants of its lees. This period of maturation spans over 5-6 months, resulting in a truly refined elixir that culminates in its magnificent bottling, traditionally performed in May after the fruitful harvest.
