Vinification

The grapes are harvested well ripe in the third ten days of September and vinified respecting the varietal character and aromaticity of this vine, immediately cooling the crushed with the help of dry ice already during the pressing phase and taking care of the initial cleaning of the must in a very rigorous way. Fermentation takes place at a controlled temperature of 15 degrees C.

Refinement

Once the pomace has been meticulously racked and lightly pressed, the wines undergo a process of separation. This is not just to facilitate the malolactic fermentation, but also to allow for the initial maturation on the delicate lees. Following this, two further rackings take place, carefully considering the quality achieved by each component.
Subsequently, the blended wine enters a refinement period where it gracefully lingers on the finest part of its own lees, housed within stainless steel tanks. This exquisite phase lasts for approximately 5-6 months, ultimately culminating in the bottling process – a task that is typically carried out in May after the harvest.
Thus, a harmonious and refined wine is born, a result of patient craftsmanship and a commitment to excellence.
